
Pomegranate and Tamarind Spritz

For a fruity fire-and-fizz combo, mix yourself this Pomegranate and Tamarind Spritz from recipe writer and supper clubber Sophie Wyburd. “This is a level up from the usual summer spritz. It balances sweet, sour and spicy in the most magical, refreshing way. You can add leftover chilli sugar syrup to a salad dressing for sweetness and heat.”Time and servings

Ingredients
- 50g caster sugar
- 0.5 red chilli, deseeded and finely chopped
- 50ml spicy tamarind vodka
- 50ml pomegranate juice
- 50ml prosecco
- 150ml (approx.) soda water, to top up
- 2 slices lime, to garnish
Method
Step 1
In a small pan, gently heat the sugar, chilli and 50ml water for about 5 mins, until the sugar has dissolved and you have a viscous syrup. Pour into a jug and leave to cool for 10 mins.Step 2
Add lots of ice to a large wine glass. Pour in the vodka, pomegranate juice and 15ml of the syrup. Give it a stir, then pour in the prosecco (stirring the still ingredients before pouring in the sparkling ones ensures the flavours mix consistently through the cocktail without affecting how fizzy it is).Step 3
Top up with soda water, add the lime slices and serve. Leftover syrup will keep for 1 week in an airtight container in the fridge, or store in the freezer for up to 3 months.Step 4
