These are served as part of Manon’s ultimate French “Plat de resistance” Christmas meal, alongside medium rare Roasted Sirloin of Beef, Green Bean Ballotins, Mamie’s Farce with apricots & chestnuts and plenty of jus. Ingredients

  • 500g potatoes, peeled and halved
  • ½ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • 4 egg yolks
  • 50g salted butter

Method

  • Step 1

    Put the potatoes in a large pan, cover with cold water then set over a high heat. Bring to the boil then cook for 20-25 mins, until cooked through. Drain and return to the pan then mash until smooth. Heat the oven to 220°C/ 200°C fan/ gas 7.

  • Step 2

    Add the salt, pepper, egg yolks and butter then mash these in until smooth and well combined.

  • Step 3

    Put a large star nozzle into a piping bag, an 8B nozzle- about 13-15mm wide. Scrape the potato mixture into the piping bag.

  • Step 4

    Line a baking sheet with greaseproof paper then pipe the potato into 20-24 little mounds, about 4cm wide. Cook for 10-15 mins, until golden and piping hot.
