Pommes Duchesse from food writer Manon Lagrève are the ultimate potato dish. Mashed potato is elevated from simple side to egg yolk enriched crispy potato crowns. These are served as part of Manon’s ultimate French “Plat de resistance” Christmas meal, alongside medium rare Roasted Sirloin of Beef, Green Bean Ballotins, Mamie’s Farce with apricots & chestnuts and plenty of jus. Ingredients

  • 500g potatoes, peeled and halved
  • ½ tsp sea salt
  • ¼ tsp freshly ground black pepper
  • 4 egg yolks
  • 50g salted butter

Method

  • Step 1

    Put the potatoes in a large pan, cover with cold water then set over a high heat. Bring to the boil then cook for 20-25 mins, until cooked through. Drain and return to the pan then mash until smooth. Heat the oven to 220°C/ 200°C fan/ gas 7.
  • Step 2

    Add the salt, pepper, egg yolks and butter then mash these in until smooth and well combined.
  • Step 3

    Put a large star nozzle into a piping bag, an 8B nozzle- about 13-15mm wide. Scrape the potato mixture into the piping bag.
  • Step 4

    Line a baking sheet with greaseproof paper then pipe the potato into 20-24 little mounds, about 4cm wide. Cook for 10-15 mins, until golden and piping hot.
