Pork and Mushroom in a Mustard Sauce with Cabbage Mash

This perfectly simple supper is ready in just 20 minutes. Deliciously creamy, serve with shredded cabbage stirred through mashed potato for a flavoursome meal to impress family and friends.

Ingredients

  • 2 tbsp of olive oil
  • 200 ml of chicken stock or white wine
  • 1 tsp of dijon mustard
  • 1 pinch of salt, to taste
  • 1 ocado onion
  • 200 g of ocado white cup mushrooms
  • 6 tbsp of creme fraiche
  • 1 tbsp of wholegrain mustard
  • 0.5 tsp of french mustard
  • 1 ocado pork fillet

Method

  • Step 1

    Cut the pork into 2cm thick slices. Heat 1 tbsp oil in a non-stick wok or large frying pan.
  • Step 2

    Fry the onion gently for 3-4 minutes until soft. Toss in the mushrooms, and cook for a minute or two to soften. Use a draining spoon to remove to a large plate.
  • Step 3

    Add the remaining oil to the frying pan, turn the heat up high and when hot add half the pork slices in a single layer. Cook for 1 minute on each side until nutty brown. Remove to the plate then cook the remaining pork in the hot pan. Transfer to the plate.
  • Step 4

    Reduce the heat to medium, pour in the stock or wine. Let it bubble and reduce slightly then stir in the crème fraiche and mustards. Return the onion, mushrooms, pork and any juices to the pan, stir together then let the sauce simmer for 4-5 minutes. Adjust seasoning, to taste then serve immediately.
