
Pork mozzarella meatballs with roast tomatoes and rice

Ingredients
- 570 g of easy to cook pork meatballs
- 250 g of ocado gold baby plum vine tomatoes
- 1 tbsp of olive oil
- 250 g of riso scotti microwaveable brown rice
- 1 sprinkling of flat-leaf parsley, (to finish is liked)
Method
Step 1
Preheat oven to 200°C/180°C fan/gas 6.Step 2
Remove the lid from the meatballs and place the pack onto a baking sheet. Bake in the oven for 30 mins until the meatballs are cooked through.Step 3
Put the baby plum tomatoes and olive oil into a small roasting tin and season. Put into the oven when 20-25 mins remain on the meatballs’ cooking time.Step 4
Cook the rice according to packet instructions, either in the microwave or on the hob.Step 5
To serve, divide the rice between two dishes, and top with the stuffed meatballs and roasted baby tomatoes.Step 6
Finish with a few leaves of flat-leaf parsley, if liked.
