Ingredients

  • 1 small handful of rocket
  • 3 slices of grilled red pepper, drained of any oil
  • 2 slices of grilled courgette
  • 1 slice of fresh tomato
  • 1 disc of mozzarella, around 2cm thick
  • 1 drizzle of fresh basil pesto
  • 1 ciabatta roll
  • 1 portabellini mushroom

Method

  • Step 1

    Brush the mushroom with a little olive oil and grill for 2-3 minutes on each side.
  • Step 2

    Slice the ciabatta roll in half and place the mushroom on one side, layering with the red pepper and courgette and topping with fresh tomato, rocket and mozzarella. Finish with a drizzle of fresh basil pesto and enjoy.
