Posh Lamb Kebab with  Baharat Tahini Sauce

Tahini – a paste made from ground sesame seeds – is paired with paprika-based spice mix baharat to bring Middle Eastern flavours to the fore in these punchy lamb kebabs. The meat is stuffed into warm pittas with a simple salad and finished with a savoury, aromatic sauce allowing those warming spices to really shine through.

Ingredients

  • 1.25 tbsp of baharat spice mix
  • 2 lemon, juiced
  • 4 tbsp of tahini
  • 1 clove of garlic
  • 1 small handful of coriander, chopped
  • 3 tomatoes, roughly chopped
  • 0.5 cucumber, roughly chopped
  • 2 little gems, shredded
  • 4 flatbreads
  • 8 lamb cutlets
  • 2 tbsp of olive oil

Method

  • Step 1

    In a large bowl, mix 1tbsp baharat spice mix, juice of 1 lemon and oil and toss with the lamb cutlets. Leave to marinate for at least 1 hr. Meanwhile, make up the tahini sauce by mixing together ¼tbsp baharat spice mix, juice of 1 lemon, tahini, garlic and coriander with 6 tbsp water and seasoning.
  • Step 2

    When the lamb is ready, heat a griddle pan and cook the lamb for 3 mins on each side. You may have to do this in batches depending on the size of your pan. Remove the lamb cutlets and leave to rest while you warm the flatbreads as instructed on the pack.
  • Step 3

    To serve, slice the meat from the cutlets and stuff into the flatbreads with the tomatoes, cucumber and lettuce and a drizzle of the tahini sauce.
