
Potato Blinis with Salmon

Ingredients
- 12 slices of smoked salmon
- 125 g of lumpfish caviar
- 2 medium eggs
- 50 ml of double cream
- 2 tbsp of crème fraîche
- 2 tsp of horseradish
- 1 tbsp of fresh chives
- 1 lemon, juiced
- 1 sprig of dill
- 400 g of maris piper or desiree potatoes, peeled and roughly chopped
- 1 tsp of sea salt
- 1 sprinkle of capers, to garnish
- 1 tsp of wasabi paste
- 1 tsp of baking powder
Method
Step 1
Place the potatoes, chives, eggs, baking powder, wasabi paste, half the horseradish and salt in a food processor; season with black pepper.Step 2
Process until completely smooth, add the cream; pulse until just combined.Step 3
Drop small tsps of mixture into a greased frying pan over a medium heat; cook for 1-2 minutes each side until golden brown and well-risen.Step 4
Mix the creme fraiche with the rest of the horseradish and lemon juice; spread over the pancakes.Step 5
Top with a smoked salmon slice, spoon on a little caviar; finish with a caperberry and sprig of dill.
