Ingredients

  • 750g baby potatoes, such as Jersey Royals
  • 100g aioli
  • 140g green olives in brine, sliced, plus a splash of brine
  • ½ lemon, zested
  • 1 drizzle extra-virgin olive oil
  • 1 small handful flat-leaf parsley, roughly chopped

Method

  • Step 1

    Steam or boil the potatoes for 20 mins or until tender; drain.
  • Step 2

    Meanwhile, in a bowl, mix the aioli, splash of olive brine and lemon zest.
  • Step 3

    Put the warm potatoes in a serving dish and dollop over the aioli; top with the sliced olives, a drizzle of oil and the parsley. Serve.
