This Power Brunch Bagel is a great way to start your day. Soft scrambled eggs are layered up with creamy cottage cheese and piled onto a toasted protein bagel for a meal that fits perfectly into a busy morning.

Ingredients
- 1 New York Bakery Protein Boost Bagel, halved
- 1 large egg
- 2 tbsp Philadelphia Protein Cottage Cheese
- ½ avocado, sliced
- 1 pinch chilli flakes, to taste
- 1 tbsp chives, finely chopped
- 1 salad onion, finely sliced
Method
Step 1
Toast until lightly golden and crisp.Step 2
Meanwhile, crack the egg into a bowl and lightly whisk. Heat a non-stick pan over a low–medium heat, add the egg and stir slowly until softly scrambled. Season with salt and black pepper, if you like.Step 3
Spread the bottom half of the bagel with cottage cheese then spoon over the scrambled egg.Step 4
Top with avocado, chilli flakes, chives and salad onion. Sandwich on the lid and serve.
