
Prawn Ceviche Tostadas

These Prawn Ceviche Tostadas are a great nibble for kicking off a Mexican-inspired dinner party. Colourful, zesty and crunchy mouthfuls, they’re also easy to prep and use tortilla chips and ready-made guacamole for speed. Created by Kate Calder, author of Three Ingredient Cocktails: 60 Drinks Made In Minutes (And Snacks To Go With Them), they’re delicious served alongside her Mango Margarita.Time and servings

Ingredients
- 165 g of raw king prawns, chopped
- 2 limes, zested and juiced
- 1 red chilli, deseeded and finely chopped
- 16 blue corn tortilla chips (gluten free if required)
- 200 g of ready-made guacamole
Method
Step 1
In a bowl, combine the prawns, lime zest and juice, chilli and a pinch of salt. Cover and leave to marinate for 20 mins, until the prawns have turned pink. Drain.Step 2
Top each tortilla with a dollop of guacamole, followed by a spoonful of the prawns; serve on a platter
