
Prawn Fajitas with Lemon Rice

Ingredients
- 1 orange pepper, sliced
- 2 tbsp of oil
- 100 g of spinach
- 1 tub of soured cream
- 400 g of raw king prawns
- 1 red pepper, sliced
- 250 g of tilda lemon rice
- 1 sachet of fajita seasoning, or to taste
Method
Step 1
Coat the prawns and the peppers in oil and seasoning. Heat a heavy based frying pan until very hot. Add the prawns and peppers and cook over a high heat for about 2 minutes, or until the prawns are cooked and pink.Step 2
Add spinach and cook for a few seconds until lightly wilted. Reheat rice according to pack instructions. Serve the fajitas topped with a little soured cream, with the hot rice.
