Ingredients

  • 1 orange pepper, sliced
  • 2 tbsp of oil
  • 100 g of spinach
  • 1 tub of soured cream
  • 400 g of raw king prawns
  • 1 red pepper, sliced
  • 250 g of tilda lemon rice
  • 1 sachet of fajita seasoning, or to taste

Method

  • Step 1

    Coat the prawns and the peppers in oil and seasoning. Heat a heavy based frying pan until very hot. Add the prawns and peppers and cook over a high heat for about 2 minutes, or until the prawns are cooked and pink.
  • Step 2

    Add spinach and cook for a few seconds until lightly wilted. Reheat rice according to pack instructions. Serve the fajitas topped with a little soured cream, with the hot rice.
