
Prawn Salad

This vibrant prawn salad is a great lunchtime option whether you’re on the go, at work or fancy a quick bite to eat in the sunshine at the weekend. It’s packed full of fresh, yummy goodness. King prawns are fried in garlic, chilli and lime before being tossed together in an aromatic salad and drizzled with a honey, soy and ginger dressing to add some ‘zing’ to your day.Time and servings

Ingredients
- 2 tbsp of olive oil, plus extra for frying
- 4 garlic cloves, finely chopped
- 1 red chilli, finely chopped
- 2.5 limes, juiced
- 300 g of raw peeled king prawns
- 1 tbsp of honey
- 1 tsp of ginger, grated
- 1 tbsp of light soy sauce
- 160 g of watercress
- 8 radishes, finely sliced into circles
- 12 cherry tomatoes, quartered
- 1 avocado, sliced
- 40 g of salad croutons
- 1 tsp of chilli flakes
Method
Step 1
Over a medium heat, add 1 tbsp of the olive oil and 2 cloves of garlic to a frying pan and fry lightly for 2 mins. Add half of the chopped red chilli, the juice of 1 lime and a pinch of sea salt and mix together, then add in the prawns. Cook for 6 mins, stirring occasionally, until pink, then set aside.Step 2
For the dressing, add the remaining 1 tbsp olive oil, the juice of 1 lime, honey, 2 cloves of garlic, grated ginger and soy sauce to a bowl and mix together well.Step 3
In a large bowl, add the watercress, radishes, cherry tomatoes, cooked king prawns and dressing and toss together well.Step 4
Serve in a couple of wide bowls and top with avocado slices, salad croutons, chilli flakes and a wedge of lime.
