Prawn Toast Tacos

Prawn toast tacos are the mash-up meal we didn’t know we needed. Super simple and ready in less than 30 mins this will replace your Friday night takeaway. Delicate prawns, warming ginger and nutty sesame come together for a seriously satisfying mouthful. Serve with egg fried rice and garlick-y broccoli for a filling supper.

Ingredients

  • 300g raw king prawns
  • 1 large egg
  • 2 tbsp ponzu, plus extra for dipping
  • 1 tsp freshly grated ginger
  • 1 tbsp toasted sesame oil
  • 4 tbsp white sesame seeds
  • 4 salad onions, thinly sliced
  • 1 tbsp cornflour
  • 6 mini flour tortillas
  • 3 tbsp black sesame seeds
  • 2 tbsp groundnut oil
  • 6 tbsp sriracha mayonnaise
  • 0.25 piece cucumber, deseeded and thinly sliced

Method

  • Step 1

    Tip the prawns, egg, 2 tbsp ponzu, ginger, sesame oil, 1 tbsp white sesame seeds, 2 sliced salad onions and the cornflour into the bowl of a food processor. Whizz until almost smooth and well combined.
  • Step 2

    Divide the mixture between the mini tortillas. Mix the remaining 3 tbsp white sesame seeds with the black sesame seeds and evenly sprinkle over the prawn mix.
  • Step 3

    Heat 1 tsp oil in a frying pan over a medium-high heat and fry the tortillas prawn side down for 2-3 mins until golden and cooked through. Flip and cook for 30 secs on the other side, transfer to a warm oven and continue with the remaining oil and tortillas.
  • Step 4

    Drizzle each tortilla with sriracha mayo then top with sliced cucumber and spring onion then fold like a taco and dip in extra ponzu sauce to serve.
