
Puff pizza squares

Ingredients
- 320 g of puff pastry, rolled to 30cmx40cm
- 1 drizzle of olive oil, for brushing
- 1 sprinkle of goat's cheese, crumbled
- 20 cherry tomatoes, sliced
- 1 handful of grated mozzarella, to scatter
Method
Step 1
Preheat oven to 220ºC/200ºC fan/gas 7. Lightly flour the worktop and roll out a 320g sheet of puff pastry with a rolling pin roll until it is 30cm x 40cm.Step 2
Cut into 10cm squares (divide the longer side by four and the shorter side by three to make 12 squares), place on two lined baking trays and prick all over with a fork.Step 3
Build the pizzas: brush a thin layer of olive oil over each square. Scatter grated mozzarella and crumbled goat’s cheese over each one, leaving a 1cm border round the edge. Slice 16-20 cherry tomatoes and distribute between the squares.Step 4
Bake for 15 mins.Step 5
Leave the pizzas to rest for 10 mins before serving, and keep extras in an airtight container for the rest of the week.
