Hot and smoky chicken with a cool pickle crunch. The DIY sauce makes this a next-level recipe.

Ingredients

  • 1 tbsp of smoked paprika
  • 2 tsp of garlic powder, plus 1 tsp for the BBQ sauce
  • 2 tsp of ground cumin
  • 1 tsp of chilli flakes
  • 1 tsp of brown sugar, plus 1 tbsp for he BBQ sauce
  • 3 tbsp of ketchup, (for the BBQ sauce)
  • 2 tbsp of cider vinegar, (for the BBQ sauce)
  • 2 tbsp of dijon mustard, (for the BBQ sauce)
  • 1 tbsp of sweet smoked paprika, (for the BBQ sauce)
  • 0.5 tsp of cayenne pepper, (for the BBQ sauce)
  • 4 soft white floury rolls, to serve
  • 80 g of rocket, to serve
  • 4 chicken breasts, (skin-on if possible)
  • 2 tbsp of olive oil
  • 1 cucumber pickles, sliced (to serve)

Method

  • Step 1

    Start by placing the chicken breasts into a shallow dish. Mix together the oil, spices, sugar and seasoning to make a marinade and rub it all over the chicken. Do this the day before and leave it to marinade in the fridge overnight to develop stronger flavours, but even half an hour is ok if you’re short of time.
  • Step 2

    Make the BBQ sauce by placing all the ingredients plus 100ml water into a saucepan and stirring together. Place over a medium-low heat and cook until thickened, stirring often. This should take around 15 mins. Remove from the heat and allow to cool.
  • Step 3

    When you are ready to cook, place the chicken onto a hot BBQ, skin-side down, and cook for 6 mins. Flip the chicken over and continue cooking for another 5-6 mins, until it is cooked through and not pink in the middle.
  • Step 4

    Remove from the BBQ and put on a chopping board. Use two forks to pull the chicken apart.
  • Step 5

    Take the rolls and slice in half. Spread a little BBQ sauce on the base, add a handful of rocket leaves then add some of the pickles. Pile the chicken high, top with some more of the delicious BBQ sauce and squash the top of the bun on.
