Ingredients

  • 1 (240g) pack pumpkin crispy fritters
  • 2 nests rice noodles
  • 500g spiced coconut laksa broth
  • 150g beansprouts
  • 1 handful coriander
  • 1 red chilli, sliced
  • 1 lime, cut into wedges

Method

  • Step 1

    Bake the fritters according to pack instructions.
  • Step 2

    Soak the noodles as per pack instructions, then drain.
  • Step 3

    Microwave the broth until piping hot.
  • Step 4

    Arrange the cooked noodles and beansprouts in bowls, ladle over the broth and top with the fritters. Garnish with coriander and chilli, and serve with lime wedges for squeezing.
