Ingredients
- 1 (240g) pack pumpkin crispy fritters
- 2 nests rice noodles
- 500g spiced coconut laksa broth
- 150g beansprouts
- 1 handful coriander
- 1 red chilli, sliced
- 1 lime, cut into wedges
Method
Step 1
Bake the fritters according to pack instructions.Step 2
Soak the noodles as per pack instructions, then drain.Step 3
Microwave the broth until piping hot.Step 4
Arrange the cooked noodles and beansprouts in bowls, ladle over the broth and top with the fritters. Garnish with coriander and chilli, and serve with lime wedges for squeezing.
