
Quail Eggs with Cumin & Chilli Dipping Salts

Ingredients
- 12 quail eggs
- 1 tsp of olive oil
- 6 tsp of sea salt flakes, 3tsp for the cumin salt, 3tsp for the chilli salt
- 0.5 tsp of ground cumin, for the cumin salt
- 0.5 tsp of smoked paprika, for the chilli salt
- 1 pinch of chilli powder, for the chilli salt
Method
Step 1
Bring a saucepan of water to the boil and cook the quail eggs for 2 mins.Step 2
Remove and cool under cold running water, then carefully peel.Step 3
Gently toss the eggs in the oil and set aside.Step 4
Mix the cumin salt ingredients in one bowl and the chilli salt ingredients in another. If you are using coarse salt and/or cumin seeds, grind each separately in a pestle and mortar. Serve alongside the eggs, ready to dip.
