
Quick Apple Pickle

For a super-speedy relish, this Quick Apple Pickle is hard to beat. Created by Ukrainian-born chef and food writer Olia Hercules, it’s tart, fresh and zingy, and a fantastic match for rich meats like pork and guinea fowl, with roasted veg, or stirred through salads. Ingredients
- 1 lemon, zest and juice
- ½ tsp sea salt
- ½ tsp runny honey
- 2 tbsp chopped dill
- 2 apples, quartered and thinly sliced
Method
Step 1
Put the lemon zest and juice in a bowl with the salt, honey and dill; mix with a fork. Taste and adjust if needed – it should be sweet, sour and salty.Step 2
Toss through the apples and leave to pickle for at least 15 mins and up to 24 hrs. Store chilled in an airtight container; eat within 2 days
