
Quinoa Cinnamon Porridge

Breakfast – the most important meal of the day. It’s definitely one that can set you up for a productive morning. This Quinoa Cinnamon Porridge is a tasty alternative to traditional oat porridge, packed with all the benefits that come with this fibrous seed. Originally from the Lake Titicaca basin in South America, the plant is now grown in the UK, amongst other countries. It’s packed with protein, dietary fiber, B vitamins and dietary minerals. This porridge is flavoured with cinnamon and vanilla, with a little crunch provided by coconut and almond flakes. Top it with blackberries and yoghurt to add a little tartness to this lovely warming breakfast.Time and servings

Ingredients
- 90 g of quinoa
- 200 ml of dairy-free milk, or any other milk of your choice
- 0.5 tsp of ground cinnamon
- 0.5 tsp of vanilla extract
- 40 g of coconut flakes
- 100 g of almond flakes, toasted
- 1 tbsp of maple syrup, or honey (if you're not vegan)
- 100 g of blackberries, or any other fruit
- 2 tbsp of dairy-free yoghurt, or greek yoghurt
Method
Step 1
Heat the quinoa, milk, cinnamon and vanilla in a saucepan. When it starts to boil, turn down the heat, cover, and simmer until the quinoa is soft and has soaked up the liquid – 15 mins or so should do it.Step 2
Remove the pan from the heat. Mix in the coconut, almonds and maple syrup. Spoon into two bowls and serve topped with the blackberries and yogurt.
