Quorn Cheese and Onion Burgers

A really easy burger recipe that kids would enjoy eating and making. The perfect summer food served in a  bun or pitta bread with crispy lettuce leaves and jacket potato wedges.

Ingredients

  • 1 tsp of dried rosemary
  • 75 g of low fat cream cheese
  • 1 tbsp of vegetable oil
  • 1 tbsp of yeast extract dissolved in 1 tbsp boiling water
  • 1 tbsp of fresh parsley, finely chopped
  • 1 medium egg, beaten
  • 1 small red onion, finely diced
  • 2 slices of wholemeal bread made into crumbs
  • 40 g of mature cheddar cheese, grated
  • 175 g of quorn meat free mince

Method

  • Step 1

    Pre-heat oil in a frying pan over a medium heat, add the red onion and dried rosemary and cook gently for 5 minutes, until the onion is softened, but not browned.
  • Step 2

    In a large mixing bowl combine the Quorn Mince and breadcrumbs with the cooked onion and rosemary. Add in the grated cheese and cream cheese, mix well to distribute the cream cheese throughout the mix.
  • Step 3

    Stir through the yeast extract and parsley, then add the beaten egg, seasoning and mix well.
  • Step 4

    Take a handful of mix and firmly compress into a burger shape approx. 2 cm in thickness. Makes approx. 8 burgers.
  • Step 5

    To cook the burgers, preheat a little oil in a large non-stick frying pan over a medium heat. Add the burgers allowing sufficient space between them for turning. Cook for 4 minutes, then turn over and continue cooking for another 4 minutes or until the burgers are piping hot.
