
Quorn Mince Vegetable Curry

Ingredients
- 2 handfulls of fresh baby spinach
- 300 g of quorn mince
- 1 large potato, peeled and cut into bite-sized wedges
- 175 g of cauliflower, cut inot small florets
- 1 jar of madras curry cooking sauce
- 175 g of green peas
Method
Step 1
Blanch potatoes and cauliflower for 8-10 minutes.Step 2
Pour the curry sauce into a large pan and heat gently.Step 3
Add the Quorn mince, potato and cauliflower to the sauce. Bring to the boil, reduce the heat and simmer for another 10 minutes, stirring frequently.Step 4
Add the peas and spinach and cook for 2-3 minutes. Season if required.Step 5
Serve the curry with mango chutney, naan or chapatti bread and rice.
