
Quorn Spaghetti Bolognese

Ingredients
- 1 large carrot, finely diced
- 100 ml of red wine
- 1 tsp of oregano
- 1 tbsp of tomato ketchup
- 2 tbsp of olive oil
- 1 large onion, finely diced
- 1 stick of celery, finely diced
- 2 cloves of garlic, crushed
- 200 g of mushrooms, finely diced
- 400 g of tinned tomatoes, chopped
- 200 ml of vegetable stock cube, dissolved in boiling water
- 1 tsp of marjoram
- 1 tbsp of tomato puree
- 350 g of quorn mince
- 350 g of spaghetti
- 1 hard cheese of you choice, grated to serve.
Method
Step 1
Heat the oil in a large frying pan. Add the onion, carrot, celery, garlic and cook over a medium heat stirring frequently for about 5 minutes until the vegetables have softened.Step 2
Add the mushrooms and stir-fry for 2-3 minutes more. Tip the tomatoes into the pan along with the vegetable stock, red wine, herbs, tomato puree and ketchup, stir well.Step 3
Cook over a low heat for 8-10 minutes until the vegetables are cooked.Step 4
Stir the Quorn Mince into the sauce, continue to cook over a low heat while you cook the spaghetti as per pack instructions. Season to taste.Step 5
Drain the spaghetti, spoon the Bolognese sauce on top and serve immediately. Sprinkle generously with cheese.
