Guests love nostalgic nibbles, so make these retro-style Radicchio Boats with Blue Cheese and Ginger for your next gathering – they take mere minutes to prep. “The blue cheese and preserved ginger combo is a classic from my gran’s dinner party days,” says chef, illustrator and food writer Letitia Ann Clark, who created the recipe. Ingredients
- 1 whole radicchio (or use red chicory)
- 100g blue cheese (vegetarian if required)
- 80g mascarpone
- 20g stem ginger in syrup, finely sliced, plus a drizzle of syrup from the jar
- 1 small bunch mint, leaves picked
Method
Step 1
Separate the leaves from the radicchio or red chicory to make the ‘boats’.Step 2
Whizz the blue cheese and mascarpone in a blender until smooth; spoon the mixture into the boats and smooth the surface.Step 3
Scatter over the sliced stem ginger, then drizzle with a little ginger syrup from the jar. Top with mint leaves and a grind of black pepper. Serve immediately or cover and chill for up to 2 hrs; remove from the fridge 20 mins before serving.
