This is a delicious, healthy and nutritious wrap that combines wonderful plant based falafels with a hint of spice and some super crunchy seeds. You’ll feel great with all the superfoods combined but most importantly, you’ll feel full for long after tucking into this delicious wrap!

Ingredients

  • 4 falafels
  • 2 tbsp of houmous
  • 2 tbsp of grilled peppers, drained
  • 1 tbsp of tomato salsa
  • 100 g of kale
  • 3 salad onions
  • 1 handful of fresh coriander
  • 1 lime, juice only
  • 2 tbsp of sunflower seeds
  • 1 tortilla wrap
  • 1 drizzle of olive oil

Method

  • Step 1

    Remove the tough stems of the kale before you start. In a serving bowl add the kale, half of the lime juice, a drizzle of good quality olive oil and a little sea salt. Massage until the kale starts to soften
  • Step 2

    Rinse the spring onions under water and remove any wilted or damaged tops or slimy skins. Finely chop the spring onion whites. Add finely chopped coriander and Me Too! Grilled Pepper Salad or a suitable alternative. Squeeze a quarter of the lime juice and mix altogether.
  • Step 3

    In a dry frying pan, over a medium heat, pour a single layer of raw sunflower seeds. Continue to stir every 15-20 seconds until the seeds become aromatic
  • Step 4

    Lightly warm the tortilla on a grill pan/frying pan
  • Step 5

    Spread Me Too! Original Houmous as a base layer on the tortilla
  • Step 6

    Place massaged kale, 4 Me Too! Original or Spinach & Kale falafels and a dollop of Salsa on top of the Houmous. Sprinkle with lightly toasted sunflower seeds
  • Step 7

    Folds sides of the tortilla and roll
