
Raspberry Mousse

“If you’re after an easy gluten-free dessert, you can’t go wrong with this Raspberry Mousse,” says Dr Linia Patel, nutritionist and author of Food For Menopause. “It’s made with silken tofu, which is wonderfully creamy and – an added bonus for women in midlife – is a source of protein and phytoestrogens (plant compounds with a similar structure to oestrogen). The fresh raspberries add zip and the grating of dark chocolate brings a bittersweet touch.” This also makes a great portable breakfast: just swap the choc for toasted nuts and sliced banana. Allow an extra 2-3 hours chilling time.Time and servings

Ingredients
- 300g silken tofu
- 125g fresh raspberries and blueberries, plus extra to serve
- 1 tsp vanilla extract
- 2 tbsp maple syrup
- 1 square 70% dark chocolate
Method
Step 1
In a food processor, blitz the tofu, berries, vanilla extract and maple syrup until smooth.Step 2
Divide between small glasses and chill for at least 2-3 hrs or until set.Step 3
To serve, top with more berries and grate over the dark chocolate, then tuck in.
