Ingredients
- 175 g of granulated sugar
- 0.5 lemon, juiced
- 450 g of raspberries
Method
Step 1
Place the sugar in a pan with 250ml of water. Heat gently until the sugar has dissolved and boil for 1 minute until the mixture becomes slightly syrupy. Pour into a bowl, mix in the lemon juice then cool.Step 2
Press the raspberries through the sieve to pick up any remaining juices. Pour the mixture into a shallow container and place in the freezer. After 2 hours, use a fork to break up the ice crystals then put back in the freezer for another 2 hours. Check the mixture every hour or so to break up any ice until the mixture is firm. Move the mixture to the fridge 30 minutes before serving.
