
Ratatouille with Goat’s Cheese and Garlic Bread

Serve up a tasty ratatouille in under half an hour – and with no chopping. This is a really quick and easy meal for two, made using some handy pre-prepared Ocado ingredients. It's definitely a recipe to keep in your back pocket for when time is tight or you've had a long day and want a meal that requires minimal hands-on time. There's barely any washing up involved, too. Ingredients
- 4 slices of garlic bread
- 1 handful of fresh basil leaves (optional)
- 1 tbsp of olive oil
- 600 g of picard organic ratatouille mix
- 150 g of la buchette natural soft white goat's cheese
Method
Step 1
Heat the oven to 200°C/180°C fan/ gas 6 and cook the garlic bread slices as instructed on the pack. Once the garlic bread is cooked, heat the grill.Step 2
Warm the oil over a medium heat in a frying pan and add the ratatouille mix, cook for 12-15 mins, stirring until the mix is cooked through and piping hot. Slice the cheese and top the ratatouille mix in the pan. Place under the grill and cook for a few mins until the cheese is bubbling and golden. Scatter with the basil leaves (if liked) and serve with the garlic bread.
