
Raw Pea Feta & Oregano Salad

"Podding peas… I've yet to meet a child who
isn't keen on helping with this tactile kitchen task. Whereas my 4-year-old
will likely eat them straight from the pod, my 10-year-old can be relied upon
to actually pod the peas and pile them in a bowl for a dish such as this one.
Either way, have plenty of peas to hand; pod some, eat some, save some and
repeat. This salad brings together raw peas with a showery burst of lemon and
oregano, and tangy thwack of feta. Perfect for barbecues or lunchboxes." –

Ingredients
- 1 bunch of fresh oregano
- 200 g of feta, crumbled
- 1 lemon, zested and juiced
- 6 tablespoons of extra virgin olive oil
- 300 g of peas in the pod, or ready shelled peas
Method
Step 1
Set kids up with a big bowl for peas and another for pods and get shelling. When they’re done, they can pick the leaves from your chosen herbs and add these to the bowl too.Step 2
Get them to crumble the tangy feta into the bowl. Meanwhile, grown-ups can zest a touch of the lemon into a separate bowl.Step 3
Next, it’s time to squeeze! Little hands can juice the lemon directly into the zest bowl. Scoop out any pips and add the olive oil and a pinch of salt and pepper.Step 4
Toss the dressing with the peas, herbs and feta. Serve straight away, with a little bread if you like.
