Ingredients

  • 1 pot Ice Kitchen Thai Red Curry Paste
  • 400ml coconut milk, tinned
  • 2 pak choi, chopped
  • 6 Tenderstem broccoli, sliced
  • 14 dumplings of your choice
  • 1 sprinkle black sesame seeds, to serve (optional)
  • chilli oil, to serve (optional)
  • 1 red chilli, sliced, to serve (optional)
  • 2 salad onions, sliced, to serve (optional)
  • 1 handful coriander, to serve (optional)

Method

  • Step 1

    Empty the frozen curry paste into a bowl and microwave for 30 seconds to defrost.
  • Step 2

    In a large silicon air fryer liner, add the coconut milk and stir in the curry paste until combined.
  • Step 3

    Add the pak choi and Tenderstem broccoli, stir through, then nestle in the dumplings.
  • Step 4

    Cook in the air fryer at 180°C for 12 mins until the dumplings are cooked through and the vegetables are tender. If you don't have an airfryer, bake for 20-25 minutes.
  • Step 5

    Transfer to individual bowls and garnish with black sesame seeds, chilli oil, red chilli, salad onions and coriander, if you like.
