
Red Leicester Burgers with Tomato and Onion Relish

These home-made burgers are made with lean minced pork, served topped with melting Red Leicester cheese.Time and servings

Ingredients
- 1 garlic clove, crushed
- 4 spring onions, finely chopped
- 1 large carrot, grated
- 2 tsp of mixed dried herbs
- 3 tbsp of fresh parsley
- 1 red onion, thinly sliced
- 2 tomatoes, sliced
- 1 tbsp of red wine vinegar
- 2 tsp of wholegrain mustard
- 4 handfuls of mixed salad leaves
- 1 pinch of salt, to season
- 500 g of lean minced pork
- 4 burger buns, each sliced in half
- 100 g of red leicester cheese, sliced
- 1 pinch of pepper, to season
Method
Step 1
Mix together the mince, garlic, spring onions, carrot, dried herbs and fresh herbs. Season well, then shape into 4 burgers. Cover and chill until ready to cook.Step 2
To make the tomato and onion relish, put the onions, tomatoes, vinegar and mustard into a bowl. Season, toss together and leave to marinate while cooking the burgers.Step 3
Preheat the chat-grill pan, grill or barbecue. Cook the burgers for 6-7 minutes on each side.Step 4
Lightly toast the burger buns on the cut sides. Top with some salad leaves, then place a burger on top of each one. Finish off with slices of Red Leicester cheese and serve with tomato and onion relish.Step 5
Cook's tip: for a blue cheese burger, top with slices of Stilton.
