
Red Onion and Goat’s Cheese Tart

This red onion and goat’s cheese tart is a simple lunch that is perfect for picnics. Red onion is caramelised slowly in muscovado sugar and then scattered over a creamy goat’s cheese and mascarpone base and baked until golden brown. Ingredients
- 200 g of creamy goat’s cheese
- 200 g of mascarpone
- 15 g of chives, roughly chopped
- 1 tsp of runny honey
- 1 tbsp of olive oil
- 2 red onions, thinly sliced
- 0.5 tsp of muscovado sugar
- 320 g of ready rolled puff pastry
- 1 egg, beaten
- 1 tsp of balsamic vinegar
- 40 g of wild rocket
Method
Step 1
In a mixing bowl, add the goat’s cheese, mascarpone, ½ tsp sea salt, ⅓ of the chopped chives, and honey and mash together with a fork before setting aside.Step 2
Put a frying pan on a medium to low heat and add the olive oil, red onion and muscovado sugar. Cook slowly for 20 mins or until the onions are soft and translucent then set aside. Preheat the oven to 160ºC/140ºC fan/gas 3.Step 3
On a lined baking tray, lay out the puff pastry and prick with a fork. Next, leaving a 1½cm border, spoon on the goat’s cheese mixture followed by the caramelised red onion. Add a sprinkling of chives and lightly press them into the goat’s cheese and caramelised onion.Step 4
Brush the pastry border with beaten egg and bake in the oven for 20 mins, until the pastry is golden.Step 5
Drizzle with the balsamic vinegar and serve topped with fresh rocket and more chopped chives.
