Ingredients
- 125 g of gram flour
- 0.5 tsp of baking powder
- 1 egg, beaten
- 2 cm of oil, for shallow frying
- 4 tbsp of fresh coriander, finely chopped
- 200 g of red onion, ready sliced
- 300 g of carrots, peeled and coarsely grated
- 1 tsp of chilli powder
- 1 tsp of ground cumin
- 0.5 tsp of salt
Method
Step 1
In a large bowl mix together the onions, carrots, gram flour, baking powder, chilli powder, cumin, salt and coriander.Step 2
Add the egg and about 8 tbsp of water, you need the mixture to be a thick batter, mix well.Step 3
Heat about 2cm of oil in a frying pan over a moderately high heat. Place heaped spoonfuls of the mixture in the hot oil, don’t overcrowd the pan - you will need to cook these in batches. Cook for 6-8 minutes turning once, until golden and cooked through.Step 4
Drain on kitchen paper and keep warm while you cook the remaining batter. Serve with curry.
