
Rice Balls with Savoury Nori Jam

Ingredients
- 10 nori sheets, 5 for the chilli nori jam, 5 for the wasabi nori jam
- 50 ml of mirin, 25ml for chilli nori jam, 25ml for wasabi jam
- 50 ml of soy sauce, 25ml for chilli nori jam, 25ml for wasabi jam
- 50 ml of sake, 25ml for chilli nori jam, 25ml for wasabi jam
- 2 tbsp of crushed chilli, for chilli nori jam
- 1 tsp of wasabi paste, for wasabi nori jam
- 150 g of saitaku sushi rice
- 4 tbsp of sugar, 2 tbsp for chilli nori jam, 2 tbsp for wasabi jam
Method
Step 1
Cook the sushi rice as per the packet instruction.Step 2
Put all the chilli nori jam ingredients with 75ml of water in a small saucepan, and all the wasabi jam ingredients - except the wasabi paste - into a separate one.Step 3
Cook both jams on a medium heat for 12 minutes until they both have a sticky texture. When the wasabi jam has cooled, add the wasabi paste to the mixture.Step 4
Set a sheet of cling film in a small bowl. Using a wet spoon scoop 30g of cooked rice, spread it onto the cling film, and make a dent in the middle of the rice.Step 5
Place half a tsp of one of the jams in the dent, then lift the cling film and twist on top to make a candy shape, in order to make the round rice ball.Step 6
Unwrap the cling film before delicately decorating the rice bowl with ingredients to garnish, like picked ginger, toasted sesame seeds, sliced cucumber, red caviar or radish.
