
Roast chicken caesar salad

Ingredients
- 100 g of baked croutons
- 2 romaine heart lettuces, (sliced)
- 1 tsp of dijon mustard, (for the dressing)
- 50 g of parmesan, (finely grated, shavings to serve)
- 1 chicken, (approx 1.6kg)
- 1 tbsp of olive oil
- 80 g of fresh anchovies
- 2 avocados, sliced
- 2 tbsp of greek yogurt, (for the dressing)
- 1 tbsp of mayonnaise, (for the dressing)
- 0.5 lemon, (juice, more can be used if desired, for the dressing)
- 1 clove of garlic, (finely grated, for the dressing)
Method
Step 1
Preheat oven to 200°C/180°C fan/gas 6. Place the chicken in a roasting tin, drizzle over the olive oil and season. Place the tray into the oven to roast for 50-60 mins, or until cooked through.Step 2
Remove from the oven, rest for 15 mins and then allow to cool slightly.Step 3
Pull all the meat off the bones and tear into chunks.Step 4
Make the dressing by whisking together everything but the cheese. Then stir in the parmesan and season to taste.Step 5
Place the romaine and chicken in a large mixing bowl and add the dressing. Toss everything together very well.Step 6
Decant to your serving plate and scatter over the fresh anchovy fillets and croutons. Add the avocado, some parmesan shavings and a last twist of black pepper before serving.
