Ingredients

  • 100 g of baked croutons
  • 2 romaine heart lettuces, (sliced)
  • 1 tsp of dijon mustard, (for the dressing)
  • 50 g of parmesan, (finely grated, shavings to serve)
  • 1 chicken, (approx 1.6kg)
  • 1 tbsp of olive oil
  • 80 g of fresh anchovies
  • 2 avocados, sliced
  • 2 tbsp of greek yogurt, (for the dressing)
  • 1 tbsp of mayonnaise, (for the dressing)
  • 0.5 lemon, (juice, more can be used if desired, for the dressing)
  • 1 clove of garlic, (finely grated, for the dressing)

Method

  • Step 1

    Preheat oven to 200°C/180°C fan/gas 6. Place the chicken in a roasting tin, drizzle over the olive oil and season. Place the tray into the oven to roast for 50-60 mins, or until cooked through.
  • Step 2

    Remove from the oven, rest for 15 mins and then allow to cool slightly.
  • Step 3

    Pull all the meat off the bones and tear into chunks.
  • Step 4

    Make the dressing by whisking together everything but the cheese. Then stir in the parmesan and season to taste.
  • Step 5

    Place the romaine and chicken in a large mixing bowl and add the dressing. Toss everything together very well.
  • Step 6

    Decant to your serving plate and scatter over the fresh anchovy fillets and croutons. Add the avocado, some parmesan shavings and a last twist of black pepper before serving.
