A crunchy chopped salad that uses up your leftover roast chicken.

Ingredients

  • 1 roasted chicken leg
  • 1 shallot, finely sliced
  • 1 lemon
  • 1 pitta bread
  • 75 g of cherry tomatoes, quartered
  • 1 little gem lettuce, shredded
  • 1 pinch of sumac
  • 0.5 small of garlic clove, crushed
  • 0.5 tbsp of olive oil
  • 0.25 cucumber, deseeded and sliced
  • 4 radishes, sliced
  • 1 handful of parsley, leaves chopped
  • 1 handful of mint, leaves chopped

Method

  • Step 1

    Preheat grill to medium.
  • Step 2

    Shred the chicken leg using two forks.
  • Step 3

    Put the shallot in a small bowl and add the garlic, lemon juice and oil. Season well and set aside.
  • Step 4

    Grill the pitta bread until lightly golden and crisp. Once cool, tear into pieces.
  • Step 5

    Toss the tomatoes with the cucumber, radishes, little gem, herbs and pitta and add the chicken. Pour over the dressing and sprinkle over the sumac to serve.
