
Roast Chicken Fattoush

Ingredients
- 1 roasted chicken leg
- 1 shallot, finely sliced
- 1 lemon
- 1 pitta bread
- 75 g of cherry tomatoes, quartered
- 1 little gem lettuce, shredded
- 1 pinch of sumac
- 0.5 small of garlic clove, crushed
- 0.5 tbsp of olive oil
- 0.25 cucumber, deseeded and sliced
- 4 radishes, sliced
- 1 handful of parsley, leaves chopped
- 1 handful of mint, leaves chopped
Method
Step 1
Preheat grill to medium.Step 2
Shred the chicken leg using two forks.Step 3
Put the shallot in a small bowl and add the garlic, lemon juice and oil. Season well and set aside.Step 4
Grill the pitta bread until lightly golden and crisp. Once cool, tear into pieces.Step 5
Toss the tomatoes with the cucumber, radishes, little gem, herbs and pitta and add the chicken. Pour over the dressing and sprinkle over the sumac to serve.
