
Roast Sirloin of Beef

Food writer Manon Lagrève brings simple French sophistication to roast sirloin of beef. Thinly sliced and served medium rare, this crowd pleaser is delicious on the day and just as good the next in sandwiches. Ingredients
- 1.5kg British sirloin joint, at room temperature
- 1 tsp sea salt
- 1 tsp freshly ground black pepper
- 1 tbsp olive oil
- 350g M&S beef gravy
Method
Step 1
Heat the oven to 220°C/ 200°C fan/ gas 7. Set the meat on a board and sprinkle with the sea salt and pepper, making sure to rub it over the whole joint.Step 2
Heat a frying pan large enough to hold the beef over a high heat. Drizzle over the olive oil then add the beef and sear on all sides for 1 min each.Step 3
Transfer the beef and any cooking juices in the pan to a roasting tin or dish. Cook for 55 mins, or until medium rare.Step 4
Remove from the oven, cover loosely with foil and leave to rest for 15 mins.Step 5
Meanwhile, heat the gravy to packet instructions.Step 6
Thinly slice the beef and serve with piping hot gravy and your favourite sides.
