Ingredients

  • 1.5kg British sirloin joint, at room temperature
  • 1 tsp sea salt
  • 1 tsp freshly ground black pepper
  • 1 tbsp olive oil
  • 350g M&S beef gravy

Method

  • Step 1

    Heat the oven to 220°C/ 200°C fan/ gas 7. Set the meat on a board and sprinkle with the sea salt and pepper, making sure to rub it over the whole joint.

  • Step 2

    Heat a frying pan large enough to hold the beef over a high heat. Drizzle over the olive oil then add the beef and sear on all sides for 1 min each.

  • Step 3

    Transfer the beef and any cooking juices in the pan to a roasting tin or dish. Cook for 55 mins, or until medium rare.

  • Step 4

    Remove from the oven, cover loosely with foil and leave to rest for 15 mins.

  • Step 5

    Meanwhile, heat the gravy to packet instructions.

  • Step 6

    Thinly slice the beef and serve with piping hot gravy and your favourite sides.
