
Roasted Figs with Mozzarella & Parma Ham

Ingredients
- 100 g of buffalo mozzarella
- 6 figs, ripe
- 1 tbsp of honey, optional
- 6 slices of parma ham
- 70 g of rocket
- 1 drizzle of balsamic vinegar
- 1 drizzle of olive oil
Method
Step 1
Preheat oven to 190°C/170°C fan/gas 5. Drain the mozzarella, pat dry and cut into 6 pieces.Step 2
Trim the figs and place upright on a flat surface then cut a cross in the top of each one, cutting most of the way down but not the whole way. Press a chunk of mozzarella into the open top of each fig.Step 3
Trim the fat off the ham and wrap a slice around each fig. Place the figs onto a foil-lined tray and drizzle with honey.Step 4
Bake in the oven for around 6-8 mins, until the cheese oozes and the ham is crispy. Serve with the rocket and drizzle with balsamic and olive oil.
