To make this effortless Tuscan salad all you need to do is toast and tear – and it’s a great way to use up slightly stale bread.

Ingredients

  • 100 g of feta
  • 1 drizzle of extra virgin olive oil
  • 1 slice of sourdough bread
  • 1 red pepper, from a jar
  • 2 slices of parma ham
  • 1 small handful of basil leaves, (optional)

Method

  • Step 1

    Start by toasting a slice of sourdough bread. Meanwhile chop the red pepper into bite-size pieces and arrange on a plate, crumble the feta over and tear the parma ham into shreds and scatter over too.
  • Step 2

    When the toast is done, chop or tear into rough bite-size pieces and add to the plate
  • Step 3

    Add a grind of salt and pepper and a trickle of extra virgin olive oil. Tear a few basil leaves on top (optional).
