you need to do is toast and tear – and it’s a great way to use up slightly

Ingredients
- 100 g of feta
- 1 drizzle of extra virgin olive oil
- 1 slice of sourdough bread
- 1 red pepper, from a jar
- 2 slices of parma ham
- 1 small handful of basil leaves, (optional)
Method
Step 1
Start by toasting a slice of sourdough bread. Meanwhile chop the red pepper into bite-size pieces and arrange on a plate, crumble the feta over and tear the parma ham into shreds and scatter over too.Step 2
When the toast is done, chop or tear into rough bite-size pieces and add to the plateStep 3
Add a grind of salt and pepper and a trickle of extra virgin olive oil. Tear a few basil leaves on top (optional).
