Ingredients
- 3 rhubarb
- 2 tbsp of caster sugar
- 1 tsp of vanilla extract
- 1 amalfi lemon
Method
Step 1
Preheat the oven to 180C.Step 2
Wash the rhubarb stalks, discard the leaves. Cut into 2 inch pieces. Place the rhubarb into a large baking pan.Step 3
Stir together the lemon juice, vanilla and sugar in a bowl. Pour over the rhubarb and toss with a wooden spoon to spread evenly. Bake for 20 minutes or until the rhubarb is soft.Step 4
Remove and let the rhubarb cool - serve over ice cream or porridge, or as a garnish for other puddings.
