With so much folklore, and indeed romance, attached, the rose is the perfect plant partner for another favourite, a glass of rosé wine! The most fragrant varieties will have the deepest, richest flavour and this simple recipe by botanical expert Mr Plant Geek (aka Michael Perry) and Ocado Wine Ambassador and drinks expert Helena Nicklin combines a very subtle note of pure rose, which plays to the gentle aromatics in most rosé wine. This is summer in a glass!

Ingredients

  • 1 bottle (75cl) rosé wine
  • 50ml sugar syrup, or 50g caster sugar, plus a splash to garnish (optional)
  • 1 lemon, juiced

Method

  • Step 1

    Decant the bottle of rosé wine into a sealable and freezable plastic container. Freeze overnight.
  • Step 2

    Once the wine is frozen, you can garnish your glass, if you like. Put a splash of sugar syrup (or honey) on a side plate. Turn a wine glass upside down and coat the rim with it. On another plate, spread out the dried rose petals and dip the rim again to coat (finely chop the petals).
  • Step 3

    Stir the rosewater (20ml homemade rosewater infusion - see tip, or ½ tsp bottled rosewater), sugar syrup and lemon juice through the frozen rosé (this should already be quite slushy, but can be broken up using a fork if necessary while in the container). Finally, spoon this into the glass and enjoy!

  • Step 5

    Cook’s tip: To make your own rosewater, add 100 ml of water and a large handful of petals to a pan. Ensure the petals are organic, untreated with any products and have been washed thoroughly before consuming. Bring these to a gentle boil over medium heat. Reduce the heat to low and let the rose petals simmer in the water for about 15-20 minutes, allowing their fragrance and subtle colour to infuse into the liquid. Strain through a fine sieve, discarding the used petals.
