
Rosemary Soda Bread

Ingredients
- 200g plain flour
- 300g wholemeal flour
- 75g rolled oats
- 1 tsp fine salt
- 1.5 tsp bicarb of soda
- 2 tbsp finely chopped rosemary
- 500ml buttermilk
- 2 garlic cloves, crushed
- 1 tsp sea salt flakes
Method
Step 1
Preheat the oven to 200°C/180°C fan/gas 6. Put the plain flour, wholemeal flour, rolled oats, fine salt, bicarb of soda and rosemary in a bowl.Step 2
Add the buttermilk and garlic, then briefly combine with a table knife to make a stiff, sticky dough.Step 3
Tip onto a floured surface; roughly shape into a round loaf and score a deep cross in the top. Sprinkle with the sea salt flakes, then transfer to a baking tray and bake for 40 mins.Step 4
Turn upside down and return to the oven for 5 mins more to ensure the base is fully baked. Leave to cool on a rack. Best eaten on the day it’s made.
