Sakura Sour

Fragrant and fun, this tipple combines classic Japanese sake with citrussy lemon, smooth cherry brandy and egg white or aquafaba, which gives a light, delicate froth to the finished drink.

Ingredients

  • 120 ml of sake
  • 60 ml of lemon juice
  • 30 ml of cherry syrup from a jar of maraschino cherries, plus 2 cherries to garnish
  • 10 ml of cherry brandy
  • 30 ml of egg white (or aquafaba if vegan)

Method

  • Step 1

    Put all the ingredients (except the cherries) into an ice-filled cocktail shaker or clean jam jar and shake.

  • Step 2

    Strain the liquid into a jug and discard the ice. Return the cocktail to the shaker, and shake again for 30 secs (shaking twice creates a smooth, fluffy egg white or aquafaba layer).

  • Step 3

    Strain the cocktail into 2 chilled coupe glasses; garnish with the maraschino cherries.
