
Sakura Sour

This Sakura Sour cocktail is
inspired by Japan’s famous cherry blossoms – clouds of springtime blooms that
are celebrated in festivals all over the country. Fragrant and fun, this tipple
combines classic Japanese sake with citrussy lemon, smooth cherry brandy and
egg white or aquafaba, which gives a light, delicate froth to the finished

Ingredients
- 120 ml of sake
- 60 ml of lemon juice
- 30 ml of cherry syrup from a jar of maraschino cherries, plus 2 cherries to garnish
- 10 ml of cherry brandy
- 30 ml of egg white (or aquafaba if vegan)
Method
Step 1
Put all the ingredients (except the cherries) into an ice-filled cocktail shaker or clean jam jar and shake.Step 2
Strain the liquid into a jug and discard the ice. Return the cocktail to the shaker, and shake again for 30 secs (shaking twice creates a smooth, fluffy egg white or aquafaba layer).Step 3
Strain the cocktail into 2 chilled coupe glasses; garnish with the maraschino cherries.
