Creamy salmon and broccoli quiche, made with Hellmann's mayonnaise.

Ingredients

  • 125 g of small broccoli florets, blanched
  • 1 cooked pastry case (20cm), or a 20cm flan tin lined with shortcrust pastry
  • 75 g of mozzarella cheese, grated
  • 2 eggs
  • 150 ml of semi skimmed milk
  • 1 small onion, finely chopped
  • 1 garlic clove, chopped
  • 3 tbsp of hellmann's light mayonnaise
  • 140 g of salmon fillet, cooked, cut into cubes
  • 1 pinch of black pepper, to season

Method

  • Step 1

    Preheat the oven to 170C.
  • Step 2

    Heat 2 tsbp of mayonnaise in a pan and add the onion, garlic and broccoli. Cook for 5 minutes, stirring constantly until softened.
  • Step 3

    Place the broccoli mixture in the pastry case, add the salmon cubes and sprinkle with cheese.
  • Step 4

    Combine the eggs and milk, season with pepper and stir in 1 tbsp of mayonnaise
  • Step 5

    Pour the mayonnaise mixture over the vegetables and cheese. Bake in the oven for 20-30 minutes or until cooked.
  • Step 6

    Serve with a green salad.
