
Salmon & Broccoli Quiche

Creamy salmon and broccoli quiche, made with Hellmann's mayonnaise.Time and servings

Ingredients
- 125 g of small broccoli florets, blanched
- 1 cooked pastry case (20cm), or a 20cm flan tin lined with shortcrust pastry
- 75 g of mozzarella cheese, grated
- 2 eggs
- 150 ml of semi skimmed milk
- 1 small onion, finely chopped
- 1 garlic clove, chopped
- 3 tbsp of hellmann's light mayonnaise
- 140 g of salmon fillet, cooked, cut into cubes
- 1 pinch of black pepper, to season
Method
Step 1
Preheat the oven to 170C.Step 2
Heat 2 tsbp of mayonnaise in a pan and add the onion, garlic and broccoli. Cook for 5 minutes, stirring constantly until softened.Step 3
Place the broccoli mixture in the pastry case, add the salmon cubes and sprinkle with cheese.Step 4
Combine the eggs and milk, season with pepper and stir in 1 tbsp of mayonnaiseStep 5
Pour the mayonnaise mixture over the vegetables and cheese. Bake in the oven for 20-30 minutes or until cooked.Step 6
Serve with a green salad.
