
Salmon Sharing Wreath

Smoked salmon and cream cheese is a vital part of any festive celebration, but forget blinis and give this Salmon Sharing Wreath a try. Spoon cream cheese over a serving platter, top with salmon, radishes, capers, dill then plenty of lemon and black pepper and serve with a stack of melba toast for guests to dig in.Time and servings

Ingredients
- 2 x 165g tubs cream cheese
- 100g LEAP MSC Smoked Sockeye Salmon, cut into small pieces
- 3 radishes, thinly sliced
- 1 small handful caperberries
- 2 dill sprigs, roughly picked
- 1 lemon, zest and juice
- 1 box Melba toast, to serve
Method
Step 1
Mix the cream cheese in a bowl until smooth. Using the back of a dessert spoon scoop out a little mixture then push onto a serving plate to look a little like a petal. Continue doing this in one big circle, then once more again in a slightly smaller circle to create a wreath.Step 2
Put a piece of salmon in the centre of each cream cheese ‘petal’.Step 3
Dot over the radish slices, caperberries and dill, then sprinkle with lemon zest then plenty of black pepper.Step 4
Serve with a squeeze of lemon juice and melba toast for dipping.
